Savory Peanut Butter Cream Pasta

A rich and elegant pasta dish made with unsweetened peanut butter, as introduced by chef Hiroshi Watanabe.

Ingredients (Serves 2)

  • 100 cc heavy cream
  • 1/2 tbsp unsweetened peanut butter
  • 10 g Parmigiano cheese
  • 1/2 clove garlic
  • 1/8 wedge of lemon
  • Salt – to taste
  • Black pepper – to taste

 

Instructions

1. Grate the Parmigiano cheese and set aside.

2. In a saucepan, combine the cream and garlic (thinly sliced or crushed).

3. Heat over low heat and let it gently simmer for about 5 minutes to infuse the garlic aroma.

4. Remove the garlic from the pan and stir in the peanut butter until fully blended.

5. Meanwhile, bring water to a boil in a separate pot.Add a generous amount of salt—it should be a bit saltier than usual, as the pasta itself should absorb the flavor.Cook your preferred pasta until al dente.

6. Once the pasta is cooked, drain and immediately transfer to the sauce.

7. Toss the pasta over low heat to coat it thoroughly.

8. Remove from heat. Add grated Parmigiano and a squeeze of lemon juice.Mix everything together until evenly combined.

9. Serve with freshly cracked black pepper on top.
